Winter has quickly invaded Alfred with frigid temperatures and light blankets of snow. Our long and beautiful harvest has finally ended, but I am still enjoying the produce from the end of the season. I created this recipe from the bounty of fresh fruits and vegetables provided by local farms. Living Acres grew the vegetables and the apples are from Sunny Cove Farm.
This has been one of my favorite vegetable dishes this fall!
Brussel Sprout Medley
Ingredients:
3 Cups Brussel Sprouts sliced in half
1 large Onion
2 small Apples (for RESTART, use green apples)
4 cloves Garlic
3 sprigs Parsley (or 1 tsp. dried)
3 Tbsp. Grass-fed Butter
Himalayan Salt
Directions:
Melt butter in skillet (I use cast-iron) on medium heat.
Cut brussel sprouts and apples into bite size pieces. Dice onion and mince garlic. Add all to skillet.
Sauté for about 10 minutes. Add chopped parsley.
Finish sautéing until brussel sprouts are tender and onions are lightly browned.
Salt to taste.
