INGREDIENTS
Filling:
4 organic apples, peeled and thinly sliced
2 Tbs organic lemon juice
2 tsp ground cinnamon
2 Tbsp coconut oil
Optional: 1 Tbsp coconut sugar or maple syrup
Topping:
1 cup shredded coconut
1/4 cup coconut flour
1/4 cup butter or coconut oil, softened
1 Tbsp arrowroot starch
2 Tbsp coconut sugar or maple syrup
1 tsp vanilla
DIRECTIONS.
Preheat the oven to 350°F.
Make the filling: In a mixing bowl, toss the apples with coconut oil, lemon juice and cinnamon and optional sweetener.
Make the topping: combine the shredded coconut, coconut flour, and arrowroot starch and mix well. Add in 1/3 cup of coconut oil, the butter, optional sweetener and mix well.
Brush the bottom and sides of a 9 by 9-inch or similarly sized baking dish with the melted coconut oil.
Place the apples in the baking dish and cover evenly with the topping.
Bake for 40-45 minutes until the apples are soft and the topping begins to brown on the edges
Serve with homemade vanilla ice cream or whipped cream!
